1 cup Poblano chile, without seeds, skin, or veins
1 cup fresh parsley, only the leaves
400 grams spaghetti
3 liters water, for cooking the pasta
1 tablespoon butter
1 cup sour cream, for the sauce
1/4 onions, for the sauce
1 clove garlic
1 cup vegetable broth, for the sauce

Cook the spaghetti in boiling water with a pinch of salt, for the time indicated in the cooking instructions. Set aside.
For the green sauce: Place the poblano pepper, garlic, onion, salt, pepper, parsley, cream, and vegetable broth in the blender. Blend until you achieve a smooth mixture.
Melt butter in a hot skillet and add the green sauce, cook for 10 minutes and set aside.
Add the pasta to the sauce and cook for 3 more minutes to integrate.
Serve on one side of the baking dish with the help of tongs and garnish with parsley.
