Homemade Gnocchi

Gnocchi is a delicious pasta made from baked potatoes mixed with egg yolks, flour, and nutmeg. It is a true delight, and if you follow the recipe precisely, it will turn out delicious.

  • 500 grams potato
  • 1/2 cups Parmesan cheese, grated
  • 3 eggs
  • 1/4 tablespoons nut , nutmeg
  • 1/2 tablespoons salt
  • 1/4 tablespoons pepper
  • 3/4 cups flour

  • Preheat the oven to 220 degrees Celsius.
  • Place the potatoes on a bed of coarse salt on a baking sheet. Bake the potatoes for 1 hour or until slightly overcooked. Remove from the oven, cut in half, and let cool for 15-20 minutes.
  • Using a spoon, scoop out the filling from the potatoes and save the potato skins for another recipe. Pass the potato filling through a ricer or a food processor to make mashed potatoes. For the recipe, we need 2 cups of mashed potatoes.
  • Place the mashed potato on a clean surface and make a well in the center.
  • Place the lightly beaten egg yolks with nutmeg, salt, and pepper in the well. Also, add the Parmesan cheese and knead with your hands until the egg yolks are fully integrated with the potato.
  • Then, gradually add the flour and incorporate it into the dough without over-kneading. You may only need 1/2 cup; the important thing is to check that the dough does not become too dry.
  • Divide the dough into 4 and carefully roll each quarter into a rope. Using a knife, cut the rope into small gnocchi and mark the gnocchi with a fork.
  • At this point, the gnocchi can be frozen for future use or cooked right away.
  • To cook the gnocchi, bring a large pot of water with plenty of salt to a boil. Once it starts boiling, add the gnocchi and let them cook until they begin to float. Using a spoon or strainer, remove the gnocchi that are ready and place them on a serving plate.
  • They can be accompanied by any pasta sauce (tomato sauce, mushroom sauce, white sauce, etc.).
