Garlic Elbow Macaroni

  • 400 grams elbow pasta, The Modern
  • 3 cloves garlic, large
  • 1/2 onions, small
  • 45 grams unsalted butter
  • 400 grams tomato purée, seasoned
  • 1 tablespoon dry chicken broth or bouillon
  • 200 grams Manchego cheese, for gratin
  • salt , to taste

  • Oven Preheated to 200° C
  • Cook the pasta in enough water until al dente (about 10 minutes)
  • In the same pot, melt the butter over medium heat with the garlic and onion until translucent
  • Pour in the tomato puree and continue cooking over low heat. Remove the garlic and onion. Add salt, pepper, chicken broth, and the pasta, mixing until well combined.
  • Pour the pasta into a baking dish and sprinkle the grated cheese on top of the pasta. Bake for 10 minutes or until the cheese is gratinated.
