Homemade Pasta

Homemade pasta is very simple to prepare and has a fresh and delicious flavor. The pasta only requires egg and flour, and some recipes also add olive oil.

  • 300 grams flour

  • Add flour and egg to a food processor until you achieve a crumbly texture (a kind of small balls).
  • Transfer the dough to a clean surface and knead until you have a smooth and silky dough. This can take up to 10 minutes, and you will need some arm strength to achieve a good texture.
  • Cover the dough with plastic wrap and let it rest for at least 30 minutes before using.
  • Take only 1/4 of the dough (keep the rest covered to prevent it from drying out) and begin to flatten it with your hands. Knead and form a square.
  • To make the pasta: Pass the square of dough through the pasta machine on setting 0. Fold the dough in half and pass it through setting 0 again. Repeat this step 5 times.
  • Now pass the square of dough once through each setting of the pasta machine until reaching setting 8 (depending on how thick you want the pasta).
  • Finally, add more flour to prevent the pasta from sticking and run the dough through the desired cutter again.
  • Let the pasta dry for at least 30 minutes before cooking.
  • Remember that fresh pasta requires less cooking time. I recommend adding it to boiling water for 5 minutes, being careful not to stir it.
