Homemade pasta is very simple to prepare and has a fresh and delicious flavor. The pasta only requires egg and flour, and some recipes also add olive oil.
Add flour and egg to a food processor until you achieve a crumbly texture (a kind of small balls).
Transfer the dough to a clean surface and knead until you have a smooth and silky dough. This can take up to 10 minutes, and you will need some arm strength to achieve a good texture.
Cover the dough with plastic wrap and let it rest for at least 30 minutes before using.
Take only 1/4 of the dough (keep the rest covered to prevent it from drying out) and begin to flatten it with your hands. Knead and form a square.
To make the pasta:
Pass the square of dough through the pasta machine on setting 0.
Fold the dough in half and pass it through setting 0 again.
Repeat this step 5 times.
Now pass the square of dough once through each setting of the pasta machine until reaching setting 8 (depending on how thick you want the pasta).
Finally, add more flour to prevent the pasta from sticking and run the dough through the desired cutter again.
Let the pasta dry for at least 30 minutes before cooking.
Remember that fresh pasta requires less cooking time. I recommend adding it to boiling water for 5 minutes, being careful not to stir it.
