Japanese Noodles in Chicken Broth

This delicious soup based on chicken broth features Japanese noodles and an oriental touch.

  • 8 cups chicken broth
  • 1/4 cups soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 500 grams japanese noodle, udon type
  • 2 cups fresh chives, chopped
  • shichimi, to taste

  • Bring to a boil in a large pot over high heat the chicken broth, soy sauce, sugar, and salt.
  • In another pot, cook the noodles in boiling water until soft.
  • Add the noodles to the broth and serve the soup. Sprinkle fresh green onions over each serving of soup with noodles.
