Bolognese Lasagna

  • 400 grams flour
  • 4 eggs
  • 30 milliliters olive oil
  • 8 tomatoes
  • 5 cloves garlic
  • 1/4 onions
  • 1 bunch aromatic herbs
  • 5 grams oregano
  • 1 kilo ground beef
  • 5 grams pepper
  • 20 grams salt
  • 250 grams Manchego cheese, grated

  • Oven preheated to 180° C
  • Form a volcano with the flour, add the eggs one by one and knead until you have a dough.
  • Add a tablespoon of olive oil if the pasta is slightly dry.
  • Let the dough rest. Roll it out with a rolling pin to a thickness of 1/2 cm.
  • Cut into rectangles, place on a plate, and dust with flour.
  • Make a cross on the top of each tomato, add to boiling water, and heat for 30 seconds, cool, remove the skin and seeds, and finely chop.
  • Finely chop the garlic and onion.
  • For the sauce, heat the olive oil and fry the garlic with the onion until translucent. Add the tomato, herbs, and oregano, and cook for 20 minutes.
  • For the pasta, boil water with salt. Cook for 5 minutes until al dente (a slight white dot should be visible in the center). Remove from the water and set aside.
  • Heat the olive oil, fry the meat until it changes color, add the sauce, and season.
  • In a baking dish, place a layer of pasta and on top of it, the Bolognese sauce. Repeat the procedure until you finish with the Bolognese. Cover with aluminum foil and bake at 180°C for 30 minutes, uncover, add the Manchego cheese, and bake for 10 more minutes or until the cheese is golden.
