  • 5 potatoes
  • 1 cup bacon, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups onion, finely chopped
  • 2 cups ground meat, beef
  • 1 cup tomato purée, natural
  • 1 pinch salt
  • 1 pinch pepper
  • 10 slices Manchego cheese
  • 1/2 cups Manchego cheese, grated
  • 1/2 cups bacon, fried, for garnish

  • Preheat the oven to 180° C.
  • On a cutting board, peel and cut the potatoes into medium-thick slices and set aside.
  • Heat a skillet over medium heat and cook the bacon until browned, add the garlic and onion, and cook for a few minutes. Add the ground beef, and when it changes color, incorporate the tomato puree, season with salt and pepper, and cook until the liquid has completely reduced. Set aside.
  • In a baking dish, place the layers of potato, the meat, the cheese, and repeat the process until the mold is full, covering with a final layer of potato topped with grated manchego cheese and the fried bacon.
  • Bake for about 30 minutes or until the potatoes are soft. Let rest for one minute before cutting and serving.
