Linguini with Shrimp and Lemon

  • 1 package linguine pasta
  • 1 lemon , (its zest and juice)
  • 500 grams large shrimp, peeled and deveined
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, chopped
  • 1 teaspoon chile flakes, Italian
  • 1/4 cups white wine
  • 1/2 cups cream
  • 2 tablespoons chives, freshly chopped
  • salt , and pepper to taste

  • Bring a large pot of water and salt to a boil. Cook the linguini in the boiling water for 6-7 minutes or the time indicated on the package until al dente.
  • Remove from the water and rinse with cold water to stop the cooking. Save 1/2 cup of the water for the sauce.
  • In a large skillet, melt the butter and sauté the garlic and chili. Add the shrimp and lemon zest and cook for 3 minutes.
  • Add the wine and lemon juice and let it boil for 1 minute.
  • Add the pasta, the cream, and 1/2 cup of the pasta water. Mix well, season with salt and pepper, and remove from heat.
  • Serve garnished with chopped scallions.
