We prepare our homemade béchamel sauce, and for this, we place the butter in a pan or pot and heat it until melted. We add the flour, stirring to mix it well with the butter and toast it for a couple of minutes. We gradually pour in the hot milk, and while stirring, we cook for 20 minutes until it thickens. We season with salt and pepper and add nutmeg to taste.
We cook the lasagna pasta sheets following the instructions on the package.
To assemble the lasagna, we place a little béchamel sauce in an oven-safe dish, on top a layer of lasagna sheets which we cover with the Bolognese filling. We drizzle with a bit of béchamel sauce and place more lasagna sheets, Bolognese, and continue this way until we reach almost the edge of the dish.
We cover the last layer, which will be lasagna sheets, with béchamel sauce. We sprinkle with grated cheese and bake for 15-20 minutes or until the cheese has melted and acquired a golden color. If instead of baking we choose to gratin, then the time is significantly reduced, so it's advisable to keep an eye on the oven to prevent the surface from burning.
Once our lasagna is ready, we take it out of the oven and let it rest for a few minutes before serving.
