Noodles with Japanese Mushrooms and Trio of Peppers

It's a pasta recipe like Italian but with peppers and more spices like Japanese.

  • 400 grams vermicelli noodle
  • oyster mushrooms, Shiitake
  • oyster mushrooms, Eryngii or king oyster
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger
  • 1 dash soy

  • We wash and clean the peppers. We cut them into strips. We clean the mushrooms with a brush (if necessary). Usually, these mushrooms come clean and it's always much better not to rinse them under the tap so they don't lose flavor. We cut them.
  • In a wok, we add a couple of tablespoons of extra virgin olive oil. We add 1 teaspoon of sesame oil. We incorporate the peppers and mushrooms, and sauté.
  • In a separate pot, we boil the noodles in plenty of salted water; the time will depend on your taste or the manufacturer's instructions, usually Chinese noodles cook in just a few minutes.
