  • 1 package La Moderna® penne rigate, 200 g
  • 1/2 cups olive oil, for the dressing
  • 1/4 cups apple cider vinegar, for the dressing
  • 1/4 cups Dijon mustard, for the dressing
  • 2 tablespoons garlic, finely chopped, for the dressing
  • salt, for the dressing
  • pepper, for the dressing
  • 1/2 cups yellow bell pepper, in medium cubes
  • 1/2 cups black olives, sliced
  • 1/2 cups persian cucumber, sliced
  • 1/2 cups tomato, in medium cubes
  • 1/2 cups red cabbage, sliced

  • Cook La Moderna® Pluma pasta in a pot with enough boiling water and salt for 7 minutes or until al dente. Drain and set aside.
  • In a bowl, combine olive oil, apple cider vinegar, Dijon mustard, garlic, salt, and pepper. Set aside.
  • Mix the bell peppers, olives, cucumber, tomato, and red cabbage with the La Moderna® Pluma pasta until well combined.
  • Serve the pasta salad and accompany it with the dressing.
