Boil the pasta until al dente, drain it, and set aside.
While the pasta is cooking, sauté the chopped vegetables (the size is up to you, depending on whether you like to find chunks of vegetables in the bake or prefer them to be less noticeable). Once everything is well sautéed and soft, add the pasta and a couple of slices of cheese, then add the béchamel and let it boil for a couple of minutes.
Transfer everything to a baking dish, cover with breadcrumbs and grated cheese, and bake in the oven for 5 minutes to gratin. Serve hot.
