Pasta in Walnut Sauce

Simple and delicious pasta with a contrast of smoky and fruity flavors combined with a walnut and sherry sauce.

  • 1/2 packages screw pasta, pen

  • Cook the pasta in salted water with a splash of oil and leave it al dente.
  • Chop the sausages into small cubes and brown them over medium heat, remove the excess fat and set aside. (Polish or German style sausage is a very seasoned sausage that adds a rich flavor to this recipe)
  • Dice the apple with the skin into small cubes, drizzle a few drops of lemon juice to prevent oxidation, and set aside.
  • Drain the pasta thoroughly and add the sausage, apple, and chili. (reserve some of the hot water in which the pasta was cooked)
  • Blend the cream cheese, cream, sugar, cinnamon, onion, walnuts, and sherry. Check the consistency and gradually add the necessary amount of milk until it is slightly runny. If you prefer it more winey, use more sherry instead of milk. Add salt and pepper and blend again to integrate everything.
  • Adjust the flavors of the sauce and if necessary, add a little more of any ingredient to intensify the flavor you prefer. Transfer it to a saucepan and heat it but do not let it boil.
  • Add a little of the reserved water to the pasta (just to hydrate and help the sauce stick well), stir gently, and add the warm walnut sauce, mixing until all the pasta is perfectly coated and ready.
  • Sprinkle with chopped parsley. Enjoy your meal.
