2 tablespoons oregano, finely chopped, for meatballs
1 tablespoon chipotle chile in adobo sauce, for the sauce
2 cups tomato, poached, for the sauce
1 clove garlic, for the sauce
1 tablespoon oregano, for the sauce
1 tablespoon thyme, for the sauce

2 packages La Moderna® rigatoni pasta
1 tablespoon olive oil, for the sauce
1 tablespoon garlic, finely chopped, for the sauce

For the meatballs, in a bowl mix the bacon with the ground beef, salt, pepper, egg, oregano, chipotle, Parmesan cheese, and breadcrumbs, form the meatballs and set aside.
For the sauce, blend the chipotle pepper with the tomato, garlic, oregano, and thyme until the ingredients are well combined, set aside.
In a pot, boil the water and when it starts to boil, add the salt, wait for it to regain temperature and add the La Moderna® spiral pasta, cook according to the package instructions. Drain, cool, and set aside.
Heat a deep skillet over medium heat with olive oil, cook the garlic with the onion until they are transparent, add the meatballs and seal until they are golden brown, cover with the tomato sauce and fill with beef broth.
Once it starts to boil, lower the heat and cook until the liquid reduces by half and the meatballs are cooked. Mix in the cooked pasta, season to taste with salt and pepper, and serve immediately with Parmesan cheese.
