Pasta with pepper cream

  • 2 bell peppers
  • 1 can evaporated milk
  • 1/4 teaspoons chicken broth
  • 1/4 cups sour cream
  • 3 tablespoons cow's milk
  • 1 teaspoon salt
  • 1 tablespoon parsley
  • 1/4 cups Manchego cheese
  • 250 grams pasta
  • 1/4 white onions
  • 1 clove garlic
  • 1 tablespoon butter

  • Roast the peppers on a griddle or directly over the stove flame, when they are ready, put them in a plastic bag.
  • In a pot, boil with a piece of onion, a garlic clove, and the pasta of your choice (fettuccine, spaghetti, macaroni...). When the pasta is well cooked, drain it and remove the garlic and onion.
  • Peel the peppers, remove the seeds and veins, and blend them with evaporated milk, seasoning, salt to taste, and cream. If you find it too thick, you can add a little milk (optional).
  • In a pot or pan, melt a little butter (to taste), add the pasta. Stir to fry the pasta with the butter. Pour the pepper cream over the pasta and stir. Let it boil.
  • You can serve it hot or cold, add a little parsley and manchego cheese for garnish.
