Pasta with Pesto, Spinach, and Peas

  • 3 cups spinach, fresh, chopped
  • 3/4 cups peas, previously thawed
  • 2 tablespoons wine vinegar, red
  • 1 avocado
  • salt , to taste
  • pepper, to taste
  • 1 avocado, ripe diced (optional)

  • Prepare the pasta according to the package instructions with boiling water and plenty of salt.
  • Place chopped spinach at the bottom of a bowl, and once the pasta is ready, add the pasta (previously drained). Stir the pasta with the spinach so that it cooks with the heat of the pasta.
  • Add the pesto and vinegar gradually, tasting to ensure the flavor is as desired. Season with plenty of salt and pepper and add the previously thawed peas. If you like, add diced avocado.
  • Serve a little hot or at room temperature as you prefer.
