Pasta with Walnut Sauce

This creamy walnut sauce pasta recipe is perfect for vegetarians and can be prepared in just 20 minutes. The walnuts give an unexpected flavor to the pasta, a very good recipe!

  • 150 grams walnuts
  • 1/2 cloves garlic, chopped
  • 1 slice bread, without edges
  • 100 milliliters cow's milk
  • 30 grams Parmesan cheese, grated
  • 30 milliliters olive oil
  • 1 kilo penne pasta
  • 1/2 cups parsley, chopped

  • Bring a large pot of water and salt to a boil for the pasta.
  • Toast the walnuts in a skillet, being careful not to burn them, until they start to smell.
  • Soak the bread with the milk.
  • Put the walnuts (reserving about 2 tablespoons to decorate the plates at the end), the soaked bread, garlic, and Parmesan cheese in a blender. Blend until a creamy sauce forms. Add olive oil, salt, and pepper, and blend again. Set aside.
  • Cook the pasta according to the package instructions until al dente. Reserve 1 cup of the water in which the pasta was cooked.
  • Add the prepared walnut sauce to the pasta, and if it is too thick, add a bit of the water in which the pasta was cooked.
  • Chop the reserved walnuts and sprinkle them over the pasta along with more Parmesan cheese and chopped parsley.
