This creamy walnut sauce pasta recipe is perfect for vegetarians and can be prepared in just 20 minutes. The walnuts give an unexpected flavor to the pasta, a very good recipe!
Bring a large pot of water and salt to a boil for the pasta.
Toast the walnuts in a skillet, being careful not to burn them, until they start to smell.
Soak the bread with the milk.
Put the walnuts (reserving about 2 tablespoons to decorate the plates at the end), the soaked bread, garlic, and Parmesan cheese in a blender. Blend until a creamy sauce forms. Add olive oil, salt, and pepper, and blend again. Set aside.
Cook the pasta according to the package instructions until al dente. Reserve 1 cup of the water in which the pasta was cooked.
Add the prepared walnut sauce to the pasta, and if it is too thick, add a bit of the water in which the pasta was cooked.
Chop the reserved walnuts and sprinkle them over the pasta along with more Parmesan cheese and chopped parsley.
