Healthy Spinach Penne

In search of eating without feeling any guilt, I decided to combine my favorite pasta with something healthy for my daughters, and this delicious recipe was born. Pasta with a rich creamy spinach sauce. The perfect dish to treat them.

  • 2 tablespoons olive oil
  • 200 grams penne pasta, whole wheat La Moderna
  • 1 1/2 cups spinach, washed and disinfected
  • 1 cup light milk
  • 1/2 cups low-fat cream
  • 1/2 cups fresh cilantro, washed and disinfected
  • 1 clove garlic
  • 1/4 onions, chopped
  • pepper
  • 100 grams Manchego cheese

  • Preheat the oven to 180° C for 10 minutes. Boil water with salt and olive oil.
  • Add the pasta and let it cook for 10 minutes. Drain and rinse with cold water and set aside.
  • Blend the spinach, milk, cream, cilantro, garlic, and onion.
  • Season with salt and pepper in a skillet over low heat for just 5 minutes.
  • Place the soup in a baking dish and cover with the sauce.
  • Add the cheese for gratin and bake for 15 minutes at 180° C.
