500 grams penne rigate pasta, From Luigi
500 grams fish fillet
1 1/2 cups green olives, stuffed with anchovies
1 glass dry white wine
2 cloves garlic
3/4 cups olive oil
1/2 bunches parsley
salt
árbol chiles, in flakes

Chop the parsley and slice the garlic.
Fry the garlic, half of the parsley, and chili flakes in olive oil.
Add the fish and olives, cook for 5 minutes, then pour in the white wine, let it evaporate, and finish cooking, season with salt and set aside.
Cook the pasta according to the package instructions.
Remove the fish and sauté the pasta in the seasoning over medium heat.
Serve the pasta on plates and add the fish and a little more parsley.
