Prepare these exquisite potato gnocchi and accompany them with the sauce of your choice. Once you have tried this homemade gnocchi recipe, you will never buy them again!
Preheat the oven to 200°C and place the potatoes on a baking tray. Cook for 40-50 minutes.
When they are ready, take them out of the oven (do not overcook them).
With a kitchen towel, take the potatoes and make a vertical cut. Scoop out the flesh of the potato and pass it through a ricer to make a puree. Repeat with the rest of the potatoes.
Place a little flour on a clean, flat surface and form a mound with the riced potatoes. Create a well in the center.
Add the beaten eggs, nutmeg, salt, and grated parmesan in the center of the potatoes and mix with your hands.
Take half of the flour and place it on top. With your hands (without overworking it), incorporate it into the dough. Add a little more flour and knead again (no more than 2 minutes to avoid tough gnocchi).
Once you have a slightly sticky but uniform dough, take a small amount and roll it into tubes with the palms of your hands.
With a knife or plastic spatula, cut the gnocchi and place them on a floured tray. Repeat with the entire dough.
To cook the gnocchi, bring a pot of salted water to boil and gradually add the gnocchi to the water. The gnocchi should float when they are ready, and you can remove them with a slotted spoon.
Serve with your favorite sauce.
