Seafood Pasta in Lemon Cream

  • 1/2 kilos shellfish, pre-cooked
  • 2 cups lemon juice
  • 1 cup fresh chives, chopped
  • salt , to taste
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cups rum
  • 1/2 kilos sour cream
  • Parmesan cheese, to taste
  • 250 grams fusilli pasta
  • 1 pinch oregano
  • 1/4 onions
  • pepper, to taste

  • Chop the seafood and place it in a bowl, add lemon juice and season with salt and pepper to taste. Let it marinate for 20 minutes.
  • While the seafood is marinating, cook the pasta with oregano, salt, and onion. When it starts to boil, let it cook for about 6 minutes and check if it’s al dente. Once the pasta is done, remove it from the water and place it in cold water for a moment to stop the cooking, then take it out and let it rest.
  • Heat olive oil in a saucepan and add the seafood mixture with lemon, add the rum when it starts to boil, then add the cream and a bit of salt to enhance the flavor. Once well cooked, remove from heat and add Parmesan cheese to taste.
  • In a pan, sauté the pasta with butter and add a bit more oregano and salt to season the pasta.
  • To serve, place a bed of pasta on a wide plate and pour the seafood on top with a bit of the lemon cream from the seafood.
