Heat water in a pot and add salt when it boils, then wait for it to return to a boil and pour in the Spaghetti La Moderna®. Cook for 9 to 11 minutes, then drain, let cool, add a tablespoon of olive oil, and set aside.
Mix the eggs with the egg yolk, parmesan cheese, and a little pepper in a bowl until well combined. Refrigerate covered with plastic wrap.
Sauté the bacon in a skillet over medium heat for 5 minutes or until completely browned, then add the shrimp and cook for 5 more minutes, remove and set aside. Place the cooked Spaghetti La Moderna®, ½ cup of the pasta cooking water, and the egg and parmesan mixture in the same skillet. Mix with tongs for 2 minutes, using quick and constant movements to prevent the egg from overcooking, but without damaging the pasta.
Serve the shrimp carbonara spaghetti on shallow plates, add the bacon, the shrimp, and garnish with parsley.
