Shrimp Carbonara Spaghetti

  • 1 pinch salt, for the pasta cooking
  • 1 package La Moderna® spaghetti, 450 g
  • 1 tablespoon olive oil
  • 3 eggs
  • 1 egg yolk
  • 1 cup Parmesan cheese, grated
  • pepper
  • 1 cup bacon, finely chopped
  • 500 grams shrimp, peeled and cleaned
  • 1/4 cups water, pasta cooking water
  • parsley, finely chopped, for garnish

  • Heat water in a pot and add salt when it boils, then wait for it to return to a boil and pour in the Spaghetti La Moderna®. Cook for 9 to 11 minutes, then drain, let cool, add a tablespoon of olive oil, and set aside.
  • Mix the eggs with the egg yolk, parmesan cheese, and a little pepper in a bowl until well combined. Refrigerate covered with plastic wrap.
  • Sauté the bacon in a skillet over medium heat for 5 minutes or until completely browned, then add the shrimp and cook for 5 more minutes, remove and set aside. Place the cooked Spaghetti La Moderna®, ½ cup of the pasta cooking water, and the egg and parmesan mixture in the same skillet. Mix with tongs for 2 minutes, using quick and constant movements to prevent the egg from overcooking, but without damaging the pasta.
  • Serve the shrimp carbonara spaghetti on shallow plates, add the bacon, the shrimp, and garnish with parsley.
