In a blender or food processor, combine the basil (washed and dried), toasted pine nuts (be careful as they can burn easily), parmesan cheese, garlic cloves, and a splash of oil.
With the blender or processor running, add the rest of the oil until it thickens.
Cook the pasta according to the package instructions, reserving a little of the cooking water.
Mix the pasta with the pesto sauce to taste and sprinkle generously with parmesan cheese.
