Spaghetti with Spinach, Mascarpone, and Parmesan

This spaghetti recipe with spinach, mascarpone, and parmesan is ideal for when unexpected guests arrive, as you can easily prepare it.

  • 450 grams spaghetti
  • olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, peeled and sliced
  • 1/2 teaspoons nutmeg
  • 400 grams spinach leaf, washed and chopped
  • coarse salt
  • pepper
  • 120 milliliters cream
  • 150 grams mascarpone cheese
  • 1/2 cups Parmesan cheese, freshly grated

  • In a pot, bring salted water to a boil. (the water should taste like seawater) Cook the pasta according to the package instructions.
  • In a hot skillet, add a splash of olive oil, the butter, garlic, and nutmeg. When the butter melts, add the spinach and let it cook for 5 minutes. Season with salt and pepper and taste.
  • Add the cream, the mascarpone. Let it reduce, season, and taste again.
  • Drain the spaghetti and reserve some of the cooking water, adding it to the spinach sauce; add enough water to make a smooth and not too thick sauce. Add the parmesan and mix everything together.
