In a pot, bring salted water to a boil. (the water should taste like seawater) Cook the pasta according to the package instructions.
In a hot skillet, add a splash of olive oil, the butter, garlic, and nutmeg. When the butter melts, add the spinach and let it cook for 5 minutes. Season with salt and pepper and taste.
Add the cream, the mascarpone. Let it reduce, season, and taste again.
Drain the spaghetti and reserve some of the cooking water, adding it to the spinach sauce; add enough water to make a smooth and not too thick sauce. Add the parmesan and mix everything together.
