  • 1 1/2 cups huitlacoche, canned
  • 1/4 onions
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons parsley
  • salt

  • 1 tablespoon butter
  • goat cheese
  • stuffed olives

  • Heat a pot with enough water, add salt and cook the spaghetti according to the package instructions. Drain and set aside.
  • Blend the huitlacoche, onion, garlic, parsley, salt, and a little of the pasta cooking water until you achieve a sauce consistency.
  • Heat a little butter in a pan and cook the sauce for 3 minutes. Incorporate the spaghetti and cook for 3 more minutes.
  • Serve the black pasta and garnish with goat cheese and stuffed olives.
