Carbonara Style Spaghetti

Delicious recipe for a romantic dinner with your partner and a good glass of white wine.

  • 1 egg
  • 5 slices bacon
  • 60 grams Mozzarella cheese, grated
  • 60 grams Parmesan cheese, grated
  • 100 grams spaghetti
  • 1/2 tablespoons oil
  • 1/2 tablespoons unsalted butter
  • 1 handful salt
  • 1 1/2 liters water
  • 1 tablespoon parsley , dried or fresh Chinese parsley (for garnish)
  • 1 cup white wine

  • Grate the cheeses and chop the 5 slices of bacon.
  • Bring the water to a boil.
  • Once boiling, add a handful of salt.
  • Add the 100 grams of spaghetti and let it cook for 7 to 10 minutes or until al dente.
  • Once the spaghetti is cooked, drain and set aside.
  • In a pan over medium heat, place half a tablespoon of oil and butter.
  • Once the butter is melted, add the chopped bacon.
  • Once the bacon is crispy, add the cup of white wine and stir.
  • Increase the temperature and let the white wine reduce by ¾.
  • Once the white wine is reduced, lower the temperature to minimum.
  • Add the Parmesan cheese, mozzarella cheese, egg, and spaghetti.
  • Stir quickly to prevent the egg from cooking and coat the pasta with the cheeses.
  • Place in a deep plate and garnish with parsley and grated Parmesan cheese.
