5 slices bacon
60 grams Mozzarella cheese, grated
60 grams Parmesan cheese, grated
100 grams spaghetti
1/2 tablespoons oil
1/2 tablespoons unsalted butter
1 handful salt
1 1/2 liters water
1 tablespoon parsley , dried or fresh Chinese parsley (for garnish)
1 cup white wine

Grate the cheeses and chop the 5 slices of bacon.
Bring the water to a boil.
Once boiling, add a handful of salt.
Add the 100 grams of spaghetti and let it cook for 7 to 10 minutes or until al dente.
Once the spaghetti is cooked, drain and set aside.
In a pan over medium heat, place half a tablespoon of oil and butter.
Once the butter is melted, add the chopped bacon.
Once the bacon is crispy, add the cup of white wine and stir.
Increase the temperature and let the white wine reduce by ¾.
Once the white wine is reduced, lower the temperature to minimum.
Add the Parmesan cheese, mozzarella cheese, egg, and spaghetti.
Stir quickly to prevent the egg from cooking and coat the pasta with the cheeses.
Place in a deep plate and garnish with parsley and grated Parmesan cheese.
