Shrimp Pasta with Pesto

  • 2 cups basil, only leaves, for the pesto
  • 2 cloves garlic, for the pesto
  • 1/4 cups Mazola® corn oil, presentation of 765 ml, for the pesto

  • 500 grams shrimp, large, clean, and shelled
  • garlic powder, for the shrimp

  • 500 grams spaghetti, cooked in salted water
  • 1/2 cups cherry tomato, cut in half
  • 1/2 cups Parmesan cheese, grated

  • Blend the basil with the garlic, Mazola® corn oil, and almonds on high speed until you obtain a semi-thick mixture; if desired, you can add more oil. Set aside.
  • Heat Mazola® corn oil in a pan over medium heat and cook the shrimp for 5 minutes until they change color, then season with garlic powder, dried basil, oregano, salt, and pepper.
  • Once the shrimp are cooked, add the spaghetti and mix perfectly. Coat with the pesto sauce, incorporate the cherry tomatoes, and cook for 6 more minutes. Add the parmesan cheese and remove from heat.
  • Arrange the shrimp pasta with pesto in a deep plate so that the ingredients are well visible, sprinkle with parsley, and serve with more parmesan if desired.
