This spaghetti with mussels recipe is quickly prepared with fresh tomatoes, garlic, and parsley. You can add a little peperoncino if you like it spicy.
Wash the mussels, remove the beards, and rinse with cold water.
Place the mussels in a large pot or pan and cook covered over medium-high heat until they open.
Remove the mussels from their shells. Cut the larger mussels into pieces. Strain the remaining liquid from the pan into a bowl, set aside.
In the same pan, add the oil and garlic, a pinch of salt, and the tomatoes. Cook for 20 minutes or until slightly reduced. Add the mussel liquid, the mussels, and the parsley. Stir and season with salt and pepper.
Cook the pasta according to the package instructions in boiling water with plenty of salt.
Add the pasta to the prepared mussel sauce. Serve hot with freshly ground pepper.
