Simple Spaghetti with Mussels

This spaghetti with mussels recipe is quickly prepared with fresh tomatoes, garlic, and parsley. You can add a little peperoncino if you like it spicy.

  • 350 grams spaghetti

  • Wash the mussels, remove the beards, and rinse with cold water.
  • Place the mussels in a large pot or pan and cook covered over medium-high heat until they open.
  • Remove the mussels from their shells. Cut the larger mussels into pieces. Strain the remaining liquid from the pan into a bowl, set aside.
  • In the same pan, add the oil and garlic, a pinch of salt, and the tomatoes. Cook for 20 minutes or until slightly reduced. Add the mussel liquid, the mussels, and the parsley. Stir and season with salt and pepper.
  • Cook the pasta according to the package instructions in boiling water with plenty of salt.
  • Add the pasta to the prepared mussel sauce. Serve hot with freshly ground pepper.
