Spaghetti in Guajillo Sauce with Sherry

1/2 cups water
1/2 onions
2 cloves garlic
2 black peppercorns
1 pinch ground cumin
6 guajillo chiles, cleaned and deveined
salt , to taste
3 liters water
1 teaspoon sea salt
250 grams spaghetti, La Moderna
100 grams Parmesan cheese, grated

In a saucepan, mix the sherry and water
Add onion, garlic, spices, and chiles, boil for 2 minutes, season.
Blend and strain, set aside (if necessary, you can add a little water).
Heat salted water until boiling, add the pasta, and cook until al dente (when there is a small white dot in the center).
Drain the pasta, arrange it on a platter, pour the sauce over it, and top with cheese.
