Tricolor Spaghetti

  • Green Sauce: Blend all the ingredients in a blender until you get a smooth paste; add olive oil until you achieve the desired texture. Set aside.
  • White Sauce: In a pan, melt the butter over medium heat, add the cream until you obtain a smooth sauce. You can lighten the sauce with a splash of milk until you reach the desired creaminess. Add nutmeg, salt, and pepper. Set aside.
  • Red Sauce: In a pan, fry the onion and crushed tomatoes in olive oil. Add the chopped árbol chili, cover, and let the flavors blend for a few minutes. Set aside.
  • Assembly: Once the three sauces are ready, divide the pasta into three equal portions. The first portion is mixed with the pesto, the second with the white sauce, and the third with the red sauce; to the second, add a tablespoon of ricotta and sprinkle with ground black pepper. Serve on a platter starting with the green, then the white, and finally the red. Serve hot.
