Tricolor Penne with Tuna

This tricolor penne with tuna recipe is perfect for lunch or dinner.

  • 300 grams penne pasta
  • 280 grams canned tuna
  • 1 pumpkin, cut into squares
  • 10 Brussels sprouts, cut in half
  • 10 button mushrooms, sliced
  • 30 grams olives
  • 10 leaves spinach, Cut into strips
  • 300 grams tomato purée
  • 2 teaspoons olive oil
  • 40 grams Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • Cook the pasta in a pot with water and a little oil.
  • Cook the Brussels sprouts and set aside.
  • Sauté the onion and garlic in olive oil, then add the vegetables and cook for 5 minutes.
  • Add the puree, tuna, and olives, season to taste and let cook for another 5 minutes. Pour in the penne pasta.
