Rotini Pasta with Red Berries

Enjoy this Christmas with the best Christmas pasta recipe, this tricolor rotini will enchant you with its delicious combination of pine nuts, caramelised apple walnuts and goat cheese, accompanied by a mustard dressing with white wine you will repeat the portion.

  • 1 bag La Moderna® rotini pasta, tricolor 450 grams
  • 1/2 cups pine nuts, tan pink
  • 1/2 cups candied pecans, finely chopped
  • 1/2 cups cranberries
  • 1/4 cups celery, finely chopped
  • 1/2 cups apple, diced
  • 1 cup goat cheese, fallen apart
  • 1/2 cups plain yogurt, for the white wine dressing
  • 2 tablespoons honey mustard, for the white wine dressing
  • 1 ounce white wine, for the dressing
  • salt, for the dressing
  • pepper, for the dressing
  • 1 cup bacon, fried to accompany
  • leaves arugula, at your service

  • In a saucepan heat the water and when it boils add the salt, wait for it to regain temperature and add the Rotini Tricolor La Moderna® pasta, cook for 9 to 11 minutes. Drain and cool slightly.
  • In a bowl, mix the Rotini Tricolor La Moderna® with the pine nuts, caramelized walnuts, blueberries, celery, apple and goat cheese, until incorporated, season with salt and pepper. Reservation.
  • For the white wine dressing, in a bowl mix the natural yogurt with the mustard and the white wine, season with salt and pepper.
  • Serve the pasta on a plate accompanied by the red wine dressing and arugula leaves.
