3 Cheese Salad

  • 1 cup strawberries, in quarters, for the glaze
  • 1/2 cups orange juice, seedless, for the glaze
  • 2 tablespoons honey, for the glaze
  • 1/4 cups brown sugar, for the glaze
  • 2 cups smoked bacon, in strips
  • 1/4 cups water, for the salad
  • 1 bag Chopped Broccoli Crunch Eva® Salad, 700 g
  • 1 cup cheddar cheese, in cubes
  • 1 cup Manchego cheese
  • 1 cup panela cheese, in cubes
  • 3 tablespoons pumpkin seeds
  • 3 tablespoons sunflower seeds

  • In a saucepan, cook the strawberries with the orange juice, honey, and brown sugar over medium-low heat until the liquid begins to reduce and you achieve a thick consistency.
  • Preheat the oven to 180 °C.
  • Place the strips of bacon on a baking sheet, brush with the strawberry mixture on both sides, and bake for 15 minutes at 180 °C until the bacon is browned, remembering to re-brush from time to time.
  • Remove the bacon from the oven and cut into medium squares. Set aside.
  • Open the bag of Eva® Chopped Broccoli Crunch Salad and remove the sweet onion dressing. Place the salad in a deep skillet and pour in the water, cover, and cook for 5 minutes. Let cool slightly.
  • Pour the salad into a bowl, add the cheddar cheese, manchego cheese, panela cheese, and the glazed bacon. Add the pumpkin seeds, sunflower seeds, and pour the sweet onion dressing along with the toppings (candied nuts with blueberries) included in the salad; mix and serve as desired.
