2 chicken cutlets, or flattened chicken breast
4 cups arugula, previously disinfected
1 cup cherry tomato
4 tablespoons Parmesan cheese, grated
2 limes, its juice
4 tablespoons olive oil
1 tablespoon salt
1 tablespoon pepper

Season the chicken breasts with salt and pepper and heat a grill.
Cook the breasts for 5 minutes on each side or until the chicken is cooked through. Remove from heat and slice into strips.
Prepare the dressing by mixing the lemon juice, olive oil, and adding salt and pepper to taste.
In a deep bowl, mix the lettuce with half of the dressing. Arrange the lettuce on two plates.
Cut the cherry tomatoes in half and place them around the lettuce.
Place the sliced chicken and Parmesan cheese on top of the bed of lettuce.
With a spoon, pour the remaining dressing over the two plates and serve.
