Arugula and Grilled Chicken Salad

A delicious arugula salad with cherry tomatoes, Parmesan cheese, and grilled chicken with a dressing of lemon, olive oil, salt, and pepper.

  • 2 chicken cutlets, or flattened chicken breast
  • 4 cups arugula, previously disinfected
  • 1 cup cherry tomato
  • 4 tablespoons Parmesan cheese, grated
  • 2 limes, its juice
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon pepper

  • Season the chicken breasts with salt and pepper and heat a grill.
  • Cook the breasts for 5 minutes on each side or until the chicken is cooked through. Remove from heat and slice into strips.
  • Prepare the dressing by mixing the lemon juice, olive oil, and adding salt and pepper to taste.
  • In a deep bowl, mix the lettuce with half of the dressing. Arrange the lettuce on two plates.
  • Cut the cherry tomatoes in half and place them around the lettuce.
  • Place the sliced chicken and Parmesan cheese on top of the bed of lettuce.
  • With a spoon, pour the remaining dressing over the two plates and serve.
