Arugula Salad, Pine Nut Praline, Blue Cheese, and Grapefruit Vinaigrette

  • 1/4 cups butter
  • 1 cup sugar
  • 1 1/2 cups pine nuts
  • 1/2 cups grapefruit juice
  • 1/4 cups red wine vinegar
  • 1 teaspoon shallot, finely chopped
  • 1 sprig thyme
  • 1/2 cups sugar
  • 1/4 cups olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup baby arugula
  • 1 cup spinach
  • 1/2 cups blue cheese, crumbled

  • In a small pot, add the butter until melted and half a cup of brown sugar until caramel forms, do not stir the caramel while boiling to avoid crystallization. Add pine nuts and mix well. Pour the mixture onto a silicone mat or a greased tray. Let it cool, break the praline into pieces, and set aside.
  • Vinaigrette: In a bowl, add grapefruit juice, red wine vinegar, shallot, thyme, sugar, olive oil, salt, and pepper. Mix well with a whisk and add chopped shallot.
  • Assembly: Serve the lettuces in a deep plate, add pieces of blue cheese and praline, and serve with a little vinaigrette.
