Breaded Cheese Caprese Salad

With this easy recipe, you can give a twist to the classic caprese salad as you know it. The delicious breaded and crispy mozzarella cheese will be like a piece of bliss when you taste it, and the balsamic vinegar reduction is the perfect accompaniment.   • 1 cup balsamic vinegar
  • 1/4 cups sugar
  • 8 slices Mozzarella cheese, cut into slices of approximately 1 cm
  • flour, for breading
  • egg, for breading
  • breadcrumbs, for breading
  • vegetable oil, for frying
  • 4 red beefsteak tomatoes, cut into thick slices
  • basil, for garnishing

  • For the vinaigrette, in a pot, cook the balsamic vinegar with the sugar until it reduces by half, about 10 minutes, until you obtain a thick mixture. Remove and set aside.
  • Bread the slices of mozzarella cheese by passing them through flour, egg, and breadcrumbs. Pack well.
  • Heat a pan over high heat with the oil and fry the breaded cheese until crispy and golden. Drain on paper towels.
  • On a plate, assemble the salad by placing a slice of tomato, alternating with the cheese until forming a 3-tier tower. Finish with a bit of fresh basil and the balsamic reduction.
