Cactus Salad with Oregano Vinaigrette

This recipe is a delicious light salad of cactus with apple and oregano vinaigrette. Don’t bore your kids with lettuce, show them new flavors and keep them healthy.

  • 2 cups nopal, in cubes
  • 1/2 water of roses
  • 2 tablespoons salt
  • 1 bowl sparkling water
  • 1 bowl ice cubes
  • 3/4 red apples, cut into medium cubes
  • 1 apple, whole
  • 2 tablespoons scallion, tops, chopped
  • 1/4 cups olive oil
  • 1/4 cups apple cider vinegar
  • 1/2 cups orange juice
  • 1/4 cups corn syrup
  • salt
  • oregano
  • white pepper
  • 1/2 cups raisins
  • chives, for garnish
  • basil, fried with vinaigrette (GOURMET SECRET)

  • Put in a pot water, salt, cactus cut into cubes, and cleaned.
  • Let cook for 5 minutes.
  • Once cooked, place in ice water for a few minutes and drain using a colander.
  • For the vinaigrette: in a bowl, put chopped green onion tops, olive oil, apple vinegar, orange juice, and mix. Add corn syrup, salt, oregano, and white pepper.
  • In a bowl, put the cactus, the vinaigrette, diced apple, and add raisins.
  • Mix well and serve.
  • If desired, garnish with green onions.
