Chicken and Corn Salad

This chicken and corn salad contains delicious ingredients such as chicken, tortilla strips, and sweet corn; additionally, its flavors and textures are perfectly balanced with the tomatillo and cilantro dressing. This salad recipe is easy to prepare and will only use ingredients that are easily found.

  • 1 Eva® trio lettuce
  • 1 cup tortillas, fried in thin strips
  • 2 cups chicken, grilled, in large cubes
  • 1/2 goat cheeses
  • 1/2 cups avocado, in cubes
  • 1/2 cups cherry tomato, quartered
  • 1/2 cups yellow corn
  • 3 tomatillos, for the dressing
  • 1 clove garlic, small, for the dressing
  • 1/2 cups cilantro, for the dressing
  • 1/2 serrano chiles, for the dressing
  • 1 teaspoon white vinegar, for the dressing
  • 1 teaspoon sugar, for the dressing
  • 1 tablespoon salt, for the dressing
  • 3/4 cups sunflower oil, for the dressing

  • For the dressing: Blend the tomatillo with the garlic, cilantro, serrano chili, white vinegar, sugar, and salt, then gradually pour in the sunflower oil while the blender is running, this way the dressing will incorporate better and achieve a creamy texture. Set aside.
  • Serve the Eva® Trío Lettuce on a platter, then place the fried tortilla and the cooked chicken. Distribute the goat cheese, avocado, yellow corn, and cherry tomatoes, and finally, garnish with fresh cilantro.
  • Serve the chicken and corn salad with the dressing you prepared and enjoy.
