  • 1/2 cups balsamic vinegar
  • 1/4 cups brown sugar
  • 1 teaspoon garlic, finely chopped

  • 2 chicken cutlets

  • 2 cups Eva® spinach
  • 2 cups cherry tomato, in halves
  • 2 cups Mozzarella cheese, mini
  • 1 cup basil, in thin strips

  • In a bowl, combine the balsamic vinegar, sugar, garlic, salt, and pepper. When the ingredients are well integrated, slowly pour in the olive oil. Set aside.
  • Place the chicken on a cutting board and season with salt and pepper. Set aside.
  • Pour a little oil over a grill on medium heat and cook the chicken for 10 minutes or until fully cooked. Cut into strips and set aside.
  • Place a bed of Eva® spinach on a plate and add the chicken, tomatoes, and mozzarella cheese. Garnish with basil and drizzle with the vinaigrette.
