4 cups lettuce, washed and dried
1 avocado, sliced
2 chicken breasts
salt , to taste
pepper, to taste
dressing, of your choice
1/4 cups flour
1 egg
1 cup panko
1/2 cups Parmesan cheese, grated
olive oil

Open the chicken breast by cutting it in half. Season with salt and pepper.
On one plate, place the flour, on another the lightly beaten egg, and on another the panko with the parmesan cheese.
Coat the breasts first in flour, then in the egg, and finally in the panko and parmesan mixture.
Cook the chicken in a pan with olive oil. Once ready, cut the breasts into strips.
In a salad bowl, mix the lettuce, avocado, and dressing (reserve some avocado and apple for garnish).
Serve on plates and garnish with the strips of chicken and the reserved avocado.
