Pineapple Filled with Chicken Salad

This salad recipe will be a fresh option that also includes a great content of vitamins and minerals, with Caribbean flavors. To enhance the flavors, you can marinate the chicken the night before, and if you don't have pineapple, you can use the Eva® Italian lettuce leaves to make Caribbean chicken tacos. This chicken salad can serve as a main dish, which you only need to accompany with white rice.

  • 1/2 pineapples
  • 2 cups chicken breast, in cubes
  • 1 teaspoon garlic powder, for the chicken
  • 1 tablespoon chile flakes, for the chicken
  • 1 teaspoon cumin, for the chicken
  • 1 teaspoon cinnamon, for the chicken
  • 2 tablespoons fresh cilantro, for the chicken

  • 1 1/2 cups black beans, cooked for the salad
  • 1/2 cups red onion, finely chopped for the salad
  • 1/2 cups red bell pepper, in cubes for the salad
  • 1/4 cups celery, finely chopped for the salad
  • 1 tablespoon spearmint, finely chopped for the salad
  • 2 tablespoons fresh cilantro, finely chopped for the salad
  • 1/4 cups lime juice, for the salad
  • 1 leaf Italian Lettuce Eva®

  • With the help of a knife, hollow out the pineapple by cutting a grid in the center, gradually removing the pulp cubes with a spoon and set aside.
  • In a bowl, mix the cubed chicken with garlic powder, chili flakes, cumin, cinnamon, cilantro, salt, pepper, and olive oil until fully incorporated. Let it rest for 10 minutes.
  • In a hot skillet, fry the chicken over medium heat until golden. Lower the heat and cook for another 15 minutes. Set aside.
  • Place the chicken in a large bowl along with the cooked beans, red onion, red pepper, celery, cubed pineapple pulp, mint, cilantro, and lime juice; mix until incorporated. Adjust the seasoning with salt and pepper, and set aside.
  • Place the Eva® Italian lettuce leaves on the hollowed-out pineapple, add the mixture, and decorate with mint leaves. Enjoy!
