Spinach and Chicken Salad

  • 250 grams spinach, chopped into medium pieces
  • 1 red bell pepper, in julienne
  • 2 teaspoons olive oil
  • 250 grams cranberries
  • 1 chicken breast , in fillets
  • 1 onion, in slices
  • 1/2 cups lemon juice
  • 2 cucumbers, in slices

  • In a bowl, mix the vegetable oil with salt and pepper. The chicken breast fillets are dipped in the mixture and then coated with breadcrumbs.
  • In a skillet with oil, fry the fillets until they are lightly browned.
  • In a bowl, thoroughly mix the spinach, bell pepper, blueberries, onion, and cucumber.
  • Cut the fillets into pieces and add them to the salad. Add the lemon juice and olive oil, mixing thoroughly.
