12 jumbo shrimp, no head
4 mandarin oranges, just the juice
1/2 cups Extra Special Olive Oil®
3 tablespoons vinegar
1 tablespoon Dijon mustard
1 red sangria lettuce
2 grapefruit, in wedges
1 package baby arugula, 120 g
1 cup cashew Extra Special®
2 avocados, sliced
1 teaspoon Great Value® plain salt
1/2 teaspoons pepper

Grill the shrimp over medium heat until cooked. Set aside.
Blend the tangerine juice, olive oil, vinegar, and Dijon mustard. Set aside.
Chop the red leaf lettuce and place it in a salad bowl, add the baby arugula, the shrimp, the grapefruit wedges, the cashews, and the avocado slices.
Pour the vinaigrette and serve.
