Composed Salad

This recipe is for you to enjoy a composed salad with all the requirements of good nutrition. Whether as a snack between meals, or as the salad at lunchtime, or even as dinner.

  • 1 clove garlic, chopped
  • 2/3 cups olive oil
  • 1/3 cups balsamic vinegar
  • 1/3 red onions, filleted
  • 2 tablespoons table salt
  • 1 teaspoon black pepper powder
  • 1 stick cinnamon
  • 1 boneless chicken breast, no skin
  • 2 tablespoons table salt
  • 1 teaspoon fine ground pepper
  • 1 cup cherry tomato
  • 4 leaves lettuce, mixed
  • 1 cup broccoli, steamed
  • 1 cup zucchini, raw in thick slices
  • 1/2 cups toasted peanuts

  • Vinaigrette: Whisk together in a small bowl the following ingredients (garlic, olive oil, balsamic vinegar, red onion, salt, pepper, cinnamon.)
  • Season the breast with salt and pepper.
  • Cook with a little olive oil.
  • Cut into strips and set aside.
  • Salad: Mix the vegetables and lettuce in a large bowl.
  • Add the vinaigrette. Mix well. And place the chicken strips.
  • Just before serving, add the peanuts and garnish with cilantro.
