The confited tomato is a delight. The recipe is basically baking tomatoes slowly for 30 minutes with spices.

5 red beefsteak tomatoes
1/2 cups olive oil
3 cloves garlic
1 tablespoon thyme
1 tablespoon rosemary
1 tablespoon sugar
pepper , to taste

Clean the tomatoes, cut them in half, and remove the seeds from the center.
Arrange the halves on a baking sheet.
Sprinkle with thyme, rosemary, sugar, salt, and pepper.
Drizzle with olive oil and garlic.
Bake at 180 degrees Celsius for 30 minutes. Remove from the oven and allow to cool.
