Confited Tomatoes

The confited tomato is a delight. The recipe is basically baking tomatoes slowly for 30 minutes with spices.

  • 5 red beefsteak tomatoes
  • 1/2 cups olive oil
  • 3 cloves garlic
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 1 tablespoon sugar
  • pepper , to taste

  • Clean the tomatoes, cut them in half, and remove the seeds from the center.
  • Arrange the halves on a baking sheet.
  • Sprinkle with thyme, rosemary, sugar, salt, and pepper.
  • Drizzle with olive oil and garlic.
  • Bake at 180 degrees Celsius for 30 minutes. Remove from the oven and allow to cool.
