Couscous Salad with Shrimp

Couscous is a round grain, similar to rice, that has a light and delicious flavor. In this recipe, it is served cold with chopped vegetables. Chopped shrimp can be added, making it exquisite.

  • 1 3/4 cups couscous, (cooks in 5 min)
  • 2 cups cherry tomato , cut in half
  • 2 yellow bell peppers, cut into small cubes
  • 1 clove garlic, finely chopped
  • 250 grams shrimp, cooked (optional)
  • 2 lemons, its juice
  • 2/3 cups olive oil
  • 3 tablespoons fresh cilantro, or finely chopped mint

  • Cook the couscous as instructed on the package, letting it sit in boiling water for 20 minutes and fluffing the couscous with a fork when it is ready.
  • While the couscous is cooking, chop the tomatoes and bell peppers. Finely mince the garlic and cut the shrimp into pieces.
  • Prepare the dressing: stir the lemon juice with the garlic, salt, pepper, and salt. Gradually add the oil, whisking with a balloon whisk to thicken it. Add the finely chopped cilantro (or mint) to the dressing.
  • Stir the couscous (already cooked) with the shrimp and chopped vegetables and add the dressing.
  • Keep refrigerated until serving.
