A very tasty oriental salad that combines rice noodles with crab, cucumber, and a rice vinegar dressing that you'll love. It's a very fresh dish, making it ideal for hot days.
First, cook the rice noodles in a large deep pot of boiling water. Let the noodles cook until they turn white, about 10 minutes. Drain the water and set the noodles aside.
Slice the cucumber and surimi sticks into thin slices and add them to the noodles, mixing well.
In another bowl, mix the vinegar, sugar, sake, and salt, and add to the salad. Mix everything well.
Sprinkle sesame seeds to taste, cover, and refrigerate for at least 60 minutes before serving.
