Crab, Cucumber, and Noodles Salad

A very tasty oriental salad that combines rice noodles with crab, cucumber, and a rice vinegar dressing that you'll love. It's a very fresh dish, making it ideal for hot days.

  • 300 grams rice noodle, (rice noodles)
  • 3 cucumbers, peeled and deseeded 3 cucumbers, peeled and deseeded
  • 5 sticks crab surimi

  • First, cook the rice noodles in a large deep pot of boiling water. Let the noodles cook until they turn white, about 10 minutes. Drain the water and set the noodles aside.
  • Slice the cucumber and surimi sticks into thin slices and add them to the noodles, mixing well.
  • In another bowl, mix the vinegar, sugar, sake, and salt, and add to the salad. Mix everything well.
  • Sprinkle sesame seeds to taste, cover, and refrigerate for at least 60 minutes before serving.
