Cucumber and peach salad

It is a fresh and simple to make salad, combining the acidity of the cucumber with the sweetness of the peach, it is a very refreshing and low calorie salad.

  • 2 cucumbers
  • 6 peaches
  • 150 grams alfalfa sprouts
  • 150 grams plain yogurt
  • 1/2 cups port wine
  • 1 clove garlic, Crushed
  • 1 tablespoon sesame seeds
  • 1 tablespoon cilantro seeds, ground
  • 150 grams almonds
  • 1 pinch salt, to taste

  • Peel the cucumbers and cut them into four pieces, remove the seeds and spread them in thick rings, add a little salt and reserve.
  • Mix the yogurt with port, garlic, sesame seeds and coriander. Season with salt and sauce
  • Place the sugar in a small saucepan with two tablespoons of water, when you start to caramelize add the almonds.
  • Lower the heat and without stopping to move, let the sugar melt again until you get a slightly golden color. Remove from the fire and let cool.
  • Serve the cucumber rings and the peaches with the yoghurt sauce, spread the praline with almonds.
