Cucumber and Peach Salad

It is a fresh and simple salad to make, combining the acidity of the cucumber with the sweetness of the peach; it is a very refreshing and low-calorie salad.

  • Peel the cucumbers and cut them into four parts, remove the seeds and slice them into thick rings, add a little salt and set aside.
  • Mix the yogurt with the port, garlic, sesame seeds, and cilantro seeds. Season with salt and sauce
  • Place the sugar in a small saucepan with two tablespoons of water, when it begins to caramelize, add the almonds.
  • Reduce the heat and, stirring continuously, allow the sugar to melt again until you achieve a slightly golden color. Remove from heat and let cool.
  • Serve the cucumber rings and peaches with the yogurt sauce, and sprinkle the caramelized almonds on top.
