Fig and Arugula Salad

This salad is made with arugula, but it can also be made with spinach and is accompanied by figs, cheese, and a dressing with garlic and vinegar.

  • 16 fresh figs, cut into quarters
  • 6 cups arugula, washed and sanitized

  • In a deep bowl, mix the garlic, vinegar, olive oil, salt, and pepper.
  • Add the figs, cover, and let them marinate for 20 minutes at room temperature.
  • Add the lettuce and goat cheese and mix well.
