Escarole Salad
Escarole salad is one of my favorite recipes; I always prepare it when I want something fresh, healthy, quick, and very tasty. I recommend making it for a nice barbecue or to accompany a pizza.

1 teaspoon Dijon mustard
1 teaspoon red wine vinegar
2 teaspoons oil , walnut
salt , to taste
black peppercorns, to taste
400 grams escarole lettuce
2 pears
250 grams gorgonzola cheese
150 grams nut , chopped

Toast the walnuts in a pan WITHOUT oil. (Set aside)
Mix the mustard well with the red wine vinegar and walnut oil, salt, and pepper.
Wash and disinfect the escarole, drain, and cut.
Wash the pears, peel and cut (into cubes).
Cut the gorgonzola cheese as you prefer, preferably into strips. Mix well.
