Escarole Salad

Escarole salad is one of my favorite recipes; I always prepare it when I want something fresh, healthy, quick, and very tasty. I recommend making it for a nice barbecue or to accompany a pizza.

  • 1 teaspoon Dijon mustard
  • 1 teaspoon red wine vinegar
  • 2 teaspoons oil , walnut
  • salt , to taste
  • black peppercorns, to taste
  • 400 grams escarole lettuce
  • 2 pears
  • 250 grams gorgonzola cheese
  • 150 grams nut , chopped

  • Toast the walnuts in a pan WITHOUT oil. (Set aside)
  • Mix the mustard well with the red wine vinegar and walnut oil, salt, and pepper.
  • Wash and disinfect the escarole, drain, and cut.
  • Wash the pears, peel and cut (into cubes).
  • Cut the gorgonzola cheese as you prefer, preferably into strips. Mix well.
